Ingredients

  • For Jalebi
  • - 1 cup all-purpose flour maida
  • - 1 tablespoon fine semolina sooji
  • - 1/2 cup yogurt curd
  • - 1/2 teaspoon baking powder
  • - BOS Natural Orange Color adjust amount based on desired color intensity
  • - Oil or ghee for frying
  • For Sugar Syrup:
  • - 1 cup sugar
  • - 1/2 cup water
  • - 1/4 teaspoon cardamom powder
  • - Few saffron strands optional

Instructions

  • Prepare the Batter:
  • - In a mixing bowl, combine all-purpose flour (maida), fine semolina (sooji), baking powder, and yogurt (curd).
  • - Mix well to form a smooth batter. The consistency should be similar to pancake batter. Add water if needed.
  • - Add BOS Natural Orange Color to the batter as per package instructions and mix until the color is evenly distributed.
  • Prepare the Sugar Syrup:
  • - In a saucepan, combine sugar and water.
  • - Heat over medium heat until the sugar dissolves completely.
  • - Add cardamom powder and saffron strands (if using) to the sugar syrup.
  • - Let the syrup simmer for 5-7 minutes until it reaches a sticky consistency. Keep warm.
  • Fry the Jalebis:
  • - Heat oil or ghee in a wide pan or kadai over medium heat.
  • - Pour the prepared batter into a squeeze bottle or a piping bag with a small nozzle.
  • - Squeeze the batter in a circular motion directly into the hot oil to form spirals or circles (like pretzels).
  • - Fry until the jalebis are crisp and golden brown on both sides. Drain excess oil and immediately dip them into the warm sugar syrup.
  • Serve:
  • - Allow the jalebis to soak in the sugar syrup for a few seconds, then remove them using a slotted spoon.
  • - Serve warm garnished with chopped nuts (optional).
